There’s nothing like the smell of coffee and baked goods in the morning! We love making pancakes, French toast, and muffins on the weekends. Today was my first try at carrot muffins. Loved the muffins, loved the recipe: easy and simple! You don’t need tons of ingredients–a few carrots, flour, eggs, baking powder, sugar, and oil is basically all you need.
Here’s the full recipe, in case you’re looking for some deliciously moist carrot muffins that disappear in the blink of an eye.
1 teaspoon shredded orange peel
1 + 1/2 cups all purpose flour
1+1/2 cups shredded carrots
1/2 cup brown sugar
1/2 cup extra virgin olive oil
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1. Preheat oven to 200 degrees C.
2. Grease muffin cups or line with paper muffin liners.
3. In a large bowl, sift together flour, baking powder, salt and cinnamon. In a separate bowl, combine oil and brown sugar, then add eggs and beat well. Combine egg mixture and flour mixture. Mix just until moistened. Add the shredded carrots and the orange peel, and mix. Spoon into prepared muffin cups.
4. Bake for 15-20 minutes. If the cups are small, bake for 10-12 minutes.
